So my birthday is actually coming up next week so this is a fun question!
Depends on who's giving me said gift, I'd be happy with either a nice meal (pizza, a good steak, burger and fries...), or a thoughtful gift from someone.

Outside of that, I'd happy just having a quiet, chill day to myself

A quiet day or two to myself in a tidy house. I'd get up early, go skiing, come down around 1pm, take a shower, eat something yummy, and then relax and read books by the fire with some coffee or chai tea. In the evening, it would be fun to go dancing or ice skating. After that, come home, take a nice soak in a the tub while listening to music, then go to bed and stargaze until I fell asleep (my dream is to have a master bedroom with large windows so I can watch the stars at night). The next morning, I wake up to my kids beating me with pillows... :D
