It is either the bird or the country but the context in which the word is said has some role. If we are talking vacation and how much time off I have left and somebody says "TURKEY" I'll probably think of the bird and Thanksgiving. If we are talking geopolitics and Greenland and the Ukraine War, tariffs and someone says "TURKEY" I'll probably think of the country. I'll never think bowling unless we are actually talking about bowling.
Thanksgiving main course.
A source of items (in dollar stores) that is replacing China in several food items.

Seeing the word Turkey makes me think of the country first but if I were to hear someone say it out loud, I would think of the bird.

Until very recently goose was the preferred Christmas meat. Goose blood pie was also widely enjoyed at the time but strangely turkey blood pie never caught on.
My mistake its actually a pudding According to my recipe you mix blood with oatmeal, fill neck skin then boil for three hours before slicing.

It’s just Turkey 🦃 because the country is Türkiye 🇹🇷 is spell as Türkiye, officially changed its international name to Türkiye in June 2022. So no mote Turkey 🇹🇷 now.
I'm from the US, so turkey has associations with the Thanksgiving holiday and our native bird which has become the symbol of the feast that day.
The bird, Thanksgiving and Idiot person. All depends on the context. We went on a turkey shoot... or What are your plans for Turkey Day, or that boy is a turkey.
The country firstly BUT these days it's spelled differently.
WW1 and the Crimean War would be the most immediate thought.
Followed by my cat who got really excited over turkey slices for his birthday and Christmas treat.
I thought a turkey sandwich since I just had one. Then the country that committed the Armenian Genocide.
