Primarily, because they look at the universe and its its inhabitants and conclude that there is no higher power guiding it. They obviously don't do it to spite God; they don't think God is real. Atheism doesn't inherently mean being an asshole to believers; many do, but it's hardly one-sided.

Religion is a matter of faith, not of reason, but only a fool thinks there's no reasoning involved. How you prioritize the elements of your reasoning plays a big part in how your religious beliefs shake out.

It's been my experience that most atheists are atheists because they're arrogant. They want to project to the world that they're more evolved and in total control. When the reality is they're scared. Too scared to except how little control we all have. They haven't made that leap yet that having faith in God isn't giving up free will. It's just accepting that God wants to rule as your lord and savior because he loves you he created you and knows what you need before you do. And what you NEED is not always what you WANT!
I get where atheists come from. There was a time when Jesus was offensive to me. I'm not any LESS curious than I ever been before I gave my life to Christ. I just accept now that I don't HAVE to know everything. God's message was simple "LOVE". It says it (depending how you want to view it) 514 to 810 times in the Bible.

Instead of projecting a motive onto other people who hold a position you don't understand, why not sincerely /ask/ them what they believe and why?

Imagine if I asked "Why do theists believe in such nonsense? Is it because they were dropped on their heads?"

cause they read the bible and don't just listen to seromons and professional appologists who carefully pick and choose the quotes and tell you what you have to think about it. read it by yourself in it's entirety, making up your own mind... that's what converts the most people to atheists. not some sort of public speaker or "atheistic missionaries". the book itself and the contradictory nonsense it says.

People don't like the thought of a Supreme being watching their every move, knowing their thoughts and that they have to be accountable to so they rather not acknowledge such a being, and in their mind feel free to sin or do whatever they feel like doing.
