I've asked variants of this question before but I am just thinking that a relationship could work in a functional capacity and private capacity but not sure about the cultural or social perimeters or boundaries of such a relationship if you consider the greater community and social network each person has.
Yes it could but it would completely depends on both persons, they truly need to love you and be open minded and accepting of the other persons wishes and religion. Times have changed but there are still families that don't approve someone who is not the same religion so its up to that individual to stand up for the 2 of them and decide him own fate or life however you like it. Now as being married part both need to be upfront before marriage to not try and convince the other to join their religion and put aside religion talk, praying ofc is a must if they are true believers but talking and discussing it over and over again could and probably will lead to tension and that can end in divorce so that is why i said they need to be open minded and accepting or each other completely. Otherwise it wouldn't work long term

My mom is a jew, non practicing, and my dad is a cathoic, non practicing. They have been married happily for 38 years. I'm jewish, and would like to wind up with a jew but, i don't really care at this point

That is quite an interesting question. I do have some friends that are Jewish and one is in a Jewish and Christian relationship. One of them is married to a Christian.
That has happened many times. It can work. It doesn't always. There are issues to be worked through, but it has worked for many couples.
Bill and Melinda Gates made it work for a long time.
