Although we no longer live under the Old Testament laws, do the principles of those laws still apply/matter?

It does, Rather if you don't follow old Testament laws, you won't get the paradise. Read this Mathew 5:17-20.



17 Think not that I am come to destroy the law, or the prophets: I am not come to destroy, but to fulfil.

18 For verily I say unto you, Till heaven and earth pass, one jot or one tittle shall in no wise pass from the law, till all be fulfilled.

19 Whosoever therefore shall break one of these least commandments, and shall teach men so, he shall be called the least in the kingdom of heaven: but whosoever shall do and teach them, the same shall be called great in the kingdom of heaven.

20 For I say unto you, That except your righteousness shall exceed the righteousness of the scribes and Pharisees, ye shall in no case enter into the kingdom of heaven.

I know Most Christians turns a blind eye to these verses, even in the churches, they don't talk about these verses, they just pick and choose. Or they try to interpret obvious white into black. Please correct me if I am wrong.

you are not wrong but the time he said that was before he died on the cross. when he died on the cross, to clean sin, then the idea in jeremia started "a new covenant inside". faith in heart fulfills no need for more.

first the old testament was given to "children of israel" for example leviticus chapter 23 emphasized several times. so not commanded other nations.

even the princples whatever that means are in the old testament that "faded away with the law carved in stone" matching jeremiah 31.

only a detail repeated in new testament is "still for guidance" to live for example book romans chapter 1.

I'm no expert but I would say the moral laws such as prohibiting incest, rape, male homosexuality, and others still apply. Jesus himself said "the sabbath was made for man, not man for the sabbath" so people shouldn't be criticized for doing something they want to do such as cutting the grass on a Sunday. The food laws were largely abolished when Peter had a vision of animals on a sheet coming down from Heaven.
