The plant Tradescantia. It survives by dying at the base to form it's own compost them the living part takes root in itself. In theory it can do this forever Essentially making it immortal. Even if only the tiniest piece survives it can regenerate making it almost impossible to eradicate.

Well nothing is truly immortal because everything that lives does die.
The immortal jellyfish is not immortal but it biologically would never get old and die from that but it dies from several other things as it's not indestructible type of immortal. So they in fact die all the time despite their name.

I only know one, a certain jellyfish if injured, returns to its polyp stage, transforming its cells into its younger self to grow again.

Nope a virus dies for example if it floats in air or lands on a table it dies within a few hours. Viruses need other life to reproduce and even live... which challenges the name and theory if pro-charoyotes meaning preceding or proto.
Similarly when a virus succeeded in a person, if it defeated the person who dies they all die too.

They are more on a suspended state than death. When intentionally killed everything dies. On Immortal aspect dying of old age or natural degradation is not found in viruses
