The word supper doesn't appear until the 13th century so there couldn't have been a last supper as such. But as I see it it was the time Jesus ordered Judas to hand him over to the Romans. Whether he Knew this would lead to crucifixion or he was just looking for a way to speak to those in charge is debatable.

There are some good post below. Read them and add this to them , although it might be reiteration. Old Testament, Old Covenant , Covered Sins through Blood Sacrifice. New Testament, New Covenant, Forgiven Sins through Jesus' Sacrifice and Blood. One of the reasons that the people serving the Temple wanted Him crucified was because He destroyed the need for them. He was going to destroy their cushy jobs.

The Last supper was a final attempt to try to get the "bonehead" disciples to understand what he was and why he was there. It was a challenge and some never understood.

So He essentially held the first Mass, turning bread and wine into His Body and Blood, a rite that is celebrated by Christian Churches millions of times each year.
