"Freedom of speech" means freedom from government censorship. It does not constrain private entities from restricting speech in private space.

The beginning point may have been when the person started recording. I think at the least she tried to "soul win" the person next to her and didn't digress when he/she asked her to. It the video was by a camera taken on the plane instead of one that one holding a cell phone took, it would be a ceiling view and I don't think they would have released it.
