Halloween Popcorn Treats

Vegetable cooking spray
3 tablespoons vegetable oil
1/3 cup popcorn kernels
3 tablespoons butter
1 teaspoon pure vanilla extract
6 cups (12-ounces) mini marshmallows
6 fun-size caramel peanut chocolate bars (such as Snickers), cut into 1/4-inch pieces
3 (3-inch) chocolate chip cookies, crumbled
1/3 cup chopped salted almonds,
1/2 cup orange and black chocolate candies (such as M and Ms)


Spray the inside of a large mixing bowl with vegetable cooking spray, and lightly spray a baking sheet. Set aside.


In a 3 quart or larger, heavy-bottomed pan, heat the oil and popcorn over medium-high heat. Cover the pan and shake gently. Cook until all the kernels have popped, about 3 minutes. Place the popcorn in the prepared bowl.


In a medium saucepan, heat the butter over low heat. Add the vanilla extract and marshmallows. Stir constantly until the marshmallows have melted and the mixture is smooth, about 5 minutes. Pour the melted marshmallow mixture over the popcorn. Using a spatula, sprayed with cooking spray, stir until the popcorn is coated. Spread the mixture over the prepared baking sheet. Sprinkle with the chocolate bar pieces, cookies, almonds and chocolate candies. Using a spatula, gently press the toppings into the popcorn. Allow the mixture to dry for 1 hour.


Break into 2-inch pieces and store airtight in a plastic container.


Serving Suggestion: Place in small plastic bags and seal with colored ribbon.


Scary Surprise Rice Krispie Treats

INGREDIENTS


3 tablespoons butter or margarine
1 package (10 oz., about 40) JET-PUFFED Marshmallows
OR
4 cups JET-PUFFED Miniature Marshmallows
Orange food coloring
6 cups Kellogg's® Rice Krispies® cereal
12 MILKY WAY® Brand Minis or 3 MUSKETEERS® Brand Minis
OR
6 FUN SIZE® Bars*
Canned frosting (green)
12 small green gum drops


DIRECTIONS
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Tint with orange food coloring.


2. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.


3. Using 1/2-cup measuring cup coated with cooking spray divide warm cereal mixture into 12 portions. Using buttered hands shape each portion into pumpkin shape around one candy piece. Pipe frosting onto each for vines and attach gumdrop for stem. Best if served the same day.


MICROWAVE DIRECTIONS: In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.


*Note: To substitute FUN SIZE® bars for the Minis, cut each FUN SIZE® bar in half.


Bat Dropping Cookies

5 cups miniature marshmallows
2 cups raisins
32 ounces white chocolate
16 ounces chocolate chips
5 cups pretzels (mostly crushed, some sticks)


Mash Pretzels till they are mostly crushed, but with some sticks left. You will want to use those small stick kind.
Mix in raisins.
In a double boiler, melt White chocolate, chocolate chips, and mini-marshmallows.
Rapidly mix chocolate mixture into pretzel/raisin mix.
For realism: Shape into little mounds on parchment paper and allow to cool.
For speed (and for those with weaker stomaches): Spread evenly on parchment paper and allow to cool.


Halloween Oreo Truffles

1 package Oreo cookies
1 package (8 ounces) cream cheese, softened
1 lb semi-sweet chocolate
Halloween (or other festive, seasonal) sprinkles


Process Oreos to crumbs in a food processor. Transfer to a medium bowl and mix in softened cream cheese (hands work best!). Roll into 24 balls, placing them on a wax paper-lined rimmed baking sheet. Freeze until solid, at least one hour or up to several days ahead.
Meanwhile melt chocolate in a medium heatproof bowl set over a pan of simmering water (or microwave if you like). Working a few at a time, dip balls in the chocolate, rolling around to coat all sides; remove with a slotted spoon and return them to baking sheet. Sprinkle with decorations and refrigerate until set. Enjoy!
