If I had to make a prediction what would happen if Europe minded its own business after the fall of the Roman Empire then first of all Africa would be Islamic. Secondly they would probably be Monarchies. Maybe 5-6 large countries dotted around Africa with very distinct top, bottom and middle African cultures.

Generally they would be less developed than European counter parts but have extremely wealthy and powerful governments, reason why is simply because civilians would struggle to support a wealthy middle class because of geography and such.

That said they would as nations probably be extremely wealthy with the wealth being concentrated at the top and also probably very corrupted. It would not be a place I would like to live personally but its not that bad either.

The truth is modern Africa was much better off when it was run by White people. Yes segregation was a bitch, but at least everyone had jobs and education and countries like Zimbabwe, South Africa and Nigeria were among the richest in the world.

If white people ignored Africa in its entirety Africa would be like it is now, but you know worse. Japan became a third world country to a world's leader in technology, military, and culture. That took them only 46 years or so with no funding from other countries. Most of Africa has remained undeveloped for around 300 years despite receiving large amounts of funding for over 50 years (1.8 billion a year from the US itself!). That depends entirely on how you define countries. a lot of Africans lived a nomadic lifestyle because the places you could farm and live tended to move around in certain parts of Africa. A better question is "Has there been any country that stabilized after the Europeans left?"
