Black opal is probably one of the most visually appealing though their is dominican amber that has a cool effect where if you place it over black cloth it goes from amber to a brilliant blue (something about how the light has to bounce back through it both ways to make it yellow but if it goes through only one way it turns blue) which would be a runner up just for uniqueness.

Emeralds. I have all of them though. Blue Diamonds, White Diamonds , Rubies, Pink Sapphires, Blue star Sapphires, White Sapphires, Emeralds, Opals, Tanzanite, Moonstone, etc. I probably have 1000 loose stones.

Diamond are interesting in science/tech in addition to being very pretty. But for looks alone I might say sapphire because I love blue.
I always was fascinated by amethyst geodes. Looks like a normal rock, but crack it open and it's a spectacle of purple!
