Why do Europeans and Americans think Turks are Arabs?

Ignorance.
Maybe they think Muslims are Arabic, I don't know.

Turkey and Iran are actually of Indo-European stock, just like Europeans. Their skin is lighter than most Arabs and their language isn't Semitic.

Turks are of Central Asian origin, but of course, when they came to Anatolia, they mixed with many races.
