Because space has far more potential. Both in keeping us as a species alive and for our continual development. For starters, most of the heavy element resources we mine were not originally from earth. All the heavy elements on earth more or less sunk into the planet when it was forming. As such, what we find on the surface is either brought up by volcanoes or deposited by asteroids from above.

In other words, there are SO MUCH RESOURCES we can mine surprisingly easily in space if we only can get up there in the first place.
