Growing up I always heard people say blush you , but when I moved to where I live now, I hear people
Say Bless you , So what do you say , when someone sneezes?

“Bless you” is historically accurate because it was once thought that sneezing was your body ejecting a demon. Blessing someone immediately after a sneeze supposedly prevented the demon from re-entering your flesh and taking over your soul. Ell oh ell!
Why the whole room doesn’t erupt into a cacophony of “bless you”, i don’t know. If the demon can’t get back into the last guy, isn’t it just going to go into the next guy?
Eff that! I don’t say “bless you”. The demon can have you! I’m saving myself!

We live really close to the Canadian border so it is not too uncommon to hear "à tes souhaits" , pronounced, ah-too-sway, really fast in one word and pretty much means best wishes, same idea as bless you

It's phonetic. It's bless you and people are saying it wrong then it becomes normal in a region. Basically one dummy says it wrong then it becomes normal for a region.

People say "bless you" because, back in the middle ages, it was thought that during a sneeze, an evil spirit could get into a person, so this called for a special blessing! That's what I learned, anyway.

It's really supposed to be God bless you when someone sneezes.
The reason is that when sneeze your heart stops.
