I tend to say it in my head if it's someone I don't know, I guess it just became a bit of a habit.

I do not. The term rose to popularity when people still blamed demons for illnesses. It was thought that sneezing was the body expelling a demon and saying “God bless you” quickly after would prevent the demon from re-entering their earthly flesh.
I believe neither that demons cause illness, nor that sneezes are our way of expelling them. It makes about as much sense as saying “Deflated balloons!” when someone sneezes. So why aren’t more people doing that? Say any damn stoopid thing you want or nothing at all. It all has exactly the same effect.
I had one woman, who worked in science no less, justify her nonsense by saying “It’s thoughtful.”. Absurd. It’s actually completely thoughtless. If you want to be thoughtful to someone who just spit and likely snotted on themselves, shut up and hand them some tissues. Ell oh ell!
Gesundheit is what I say & Gesundheit literally means "health"; it was formed by a combination of gesund ("healthy") and -heit ("-hood"). Wishing a person good health when they sneezed was traditionally believed to forestall the illness that a sneeze often portends. Sometimes when someone sneezes I say I hope it isn’t Covid & I walk away.

If I had a superpower my superpower would be to speak & understand every known language. On the other hand I don’t know a genie so I’m just going to have to take a class. A long time ago I took a sign language class & now I only remember the middle finger & bad words.
A genie would be handy although I guess classes are more realistic 😅

I've been known to yell it across parking lots with no idea where it came from. So far always have had a "Thank you" thrown back.

The same reason that any God-believing person would say that to someone else. Because you take God's commands seriously enough to love others enough to want God's blessings to infest themselves into others hearts
