I think it's generally a bad idea due to potential legal issues. The man is asking to be sued by the woman for inappropriate touching or sexual harassment or some such.

There's one video I saw that was quite funny. The guy looked like he was struggling not to get a boner throughout the whole thing.

I hope you're not suggesting that we (women) shouldn't go to such classes.
I didn't say that at all. I'm just saying it's a legal risk, and as a man who has been falsely accused before, I know legal risks exist. I was just minding my business at college one day and got a letter from the Dean explaining that I was expelled because a woman, with no evidence whatsoever, falsely accused me of "stalking" her. I tried to get a lawyer, and the lawyer said I would have no case, because it would just be my word vs hers.
This stuff happens, and a man shouldn't put himself in a compromising situation to increase the likelihood of being sued about it.
I don't exactly know, but women should grapple women and men should grapple men.
The woman should probably rip the male attacker's eyes out.

It is a martial arts class, as long as you are all professional then there is no legal issues or suing.
I see nothing wrong with men & women interacting with one another, whether work environment or leisure activity or martial arts. Some people are so ‘snowflakey’.
It sounds like equality to me.
It's not equal. The only time I've ever been beaten by a woman at martial arts was when I was 16 years old and she was 6 entire belt ranks above me at the time, and I was "rusty" and hadn't practiced in 3 years. In that case, she caught my front roundhouse kick and put me in the Reverse Figure Four Ankle lock and transitioned to the Calf Crusher from there, at which point I was forced to tap out. I was 6th kyu at the time (light green belt) and she was a first degree black belt.
I haven't made that mistake since then, and I tap out 2nd degree black belts of both genders pretty easily these days.
