This vehicle isn’t only used for ice cream, although thats probably it’s most common use, but also food generally like tacos. I've also seen businesses use it to haul inventory around too. It seems to only be for commercial use

That's what we call a Panel Van, which is a specific type of truck. Similarly, UPS and some FedEx trucks are panel vans. Obviously these are food trucks, which are often made from customized panel vans. The name comes from the fact that the truck has flat panel sides, originally for carrying cargo. Using them as food trucks is a later development, though one that's been around since the 60s. Panel vans actually originated in the 1920s.

For the photos that you have shown we would call them gut trucks or gut wagons. The literal name is a utility van, let's see plumbers, electricians, Carpenters, potato chip van, bread Van, moving van.

When I see that, I immediately think Food Truck because there are so many food trucks that I’ve come across before and they all have that shape.


Also, colloquially, I’ve heard the term Food Truck used a lot for any street vendor that sells food from a vehicle like that.

Technically called a step van, but I don't think anyone will be confused if you call it either a van or a truck.
