Heading out to California the 10th and never been what should I check out there?

Reading your other posts, it sounds like you'll be more around the LA area. Unfortunately, November will be too late to visit the mountains, but it's the perfect time to explore the Mojave Desert like Death Valley, Joshua Tree and Mojave Preserve. Definitely recommend visiting some of the Spanish missions and maybe head to San Diego, Big Sur and Hearst's Castle. And maybe Solvang. Oh and you have to do one of the Channel islands. I'd recommend either Catalina or Santa Cruz. But avoid downtown LA like the plague.

Getting an air bnb in either Anaheim, Los Angeles or oceanside haven’t really decided yet

Not really beach weather, other than to just chill, but definitely lots of good food options at any of those places... depending on location of your rental and how far you wanna venture out.

I feel like LA is overrated unless you wanna do the movie touristry stuff or catch a sports game. Anaheim obviously disneyland if you're into that. Not sure about how hiking options compare between those cities.

Try Santa monica, or Manhattan beach, or Redondo beach, or if you don't mind being in Orange County which is actually really nice then Laguna Beach or Newport Beach are great places to stay. Also, Seal Beach in Dana Point which are farther south or also really nice places to stay. North of Santa Monica is Oxnard which is also an interesting place to stay although a little bit out of the way. Do not under any circumstances stay in downtown LA as it is not safe and you will be very sorry you did that.

Also, I think you are probably tempted to stay in Anaheim because it is proximate to disneyland. Trust me it is not worth it. Anaheim is a very dangerous place and nobody should stay there.

make sure you go to Broad Street Oyster Company in Malibu and Bottega Louie in DTLA (downtown LA). and i can give you a million others (food-wise, i have no idea what the tourists do)

Between those two, I would definitely recommend Oceanside. It's a nice little town and the beaches are very nice. Anaheim has nothing to offer other than Disneyland as far as I'm concerned.

Beach but I’m sure the water is cold I like to surf, skate, go out to eat, hiking, attractions stuff like that I guess, drinking etc

There's not much hiking in either Oceanside or Anaheim, but the beaches in Oceanside are great. There are some nice restaurants there too. Anaheim really has no redeeming qualities other than Disneyland to be honest. Not a "destination" at all.

Los Angeles is generally a shithole but it does have some nice beaches and restaurants. I grew up near the LA airport and spent a lot of time surfing and hanging out at the local beaches. There are also some nice hikes in the LA area and Santa Monica mountains.

Santa Barbara is a few hours north of LA and it is nice. Lots of nice hiking up there.

Unfortunately not too long because of college I leave here the 10th won’t be there til the 11th and will only be staying 3-4 days. So trying to make the most of it while I can. Then maybe next year during the summer go back up there.
