There's a girl at work that calls everybody, "dear". She's just doing it to be nice or friendly. It means the same as a guy calling a girl, "Hun". It's a casual term of endearment.
In your case, obviously, he likes you. But it doesn't mean he LIKES YOU likes you. I've done the same things with my best friend: held hands, cuddled, even accidentally kissed her once and I ALWAYS tell her that I love her and quite often call her, "Hun" or "Sweetheart", but we're not in love with each other.
