In that case I would continue talking to her as normal and see where things go.
I would say if she was completely disinterested she would have stopped talking to you because she wouldn't want to give you the wrong idea. So who knows, maybe she's into you but not ready to take on a relationship at the moment. I would say thats my best bet.

She actually has a boyfriend. I think she doesn’t want to give me the wrong idea because I offer to buy her snacks at work but she doesn’t take it. I literally do this with male coworkers as well so I think she is reading too much into it

Oh well then in that case either 1. she just sees you guys as friends, or 2. maybe she does, like I said, find you attractive and nice and whatnot but can't pursue moving forward for obvious reasons (she's taken). If I were you I wouldn't push onward knowing she's taken. If anything, I would say you're lucky she still talks to you. Most girls cut off communications with other men they find out is into them because they are taken and continuing to talk to them would seem inappropriate.

Then you have three options, buddy
1. Oh well, move on. Nothing you can do, she's taken anyways.
2. Continue to hope things might magically change
or 3. Do something about it. Let your rejection be motivation to become better. Figure out a way to better yourself and make her want to change her mind. (eg, workout)

I don't know about you, but personally I would go with option 3. Make her want you. Make her wish she was with you instead of that other guy.

That is great question. It's difficult to change a woman's mind once she has you pegged a certain way. I've been where you are and did not get out of the friend zone. I can throw some things out there that are sort of do's and don'ts. One thing you don't want to do is pester her or revisit the issue of a date - that never works. You could try to make yourself more appealing to her by being a bit aloof and mysterious. This might be casual avoidance of her and getting away from the "friendship" so that she does not categorize as such. If you have a female best friend, mention her or let the co-worker hear you mention her name and see if you can cause some jealousy on her part (this is a long shot). Improve your appearance with clothes and by working out and becoming more ripped. She wants a high value male so you have to put on the appearance of one and women are always more intrigued by men who make lots of money. These are just my thoughts in no particular order.
