Also, the actual acceleration differs at different altitudes so "-9.81" is a better general use approximation for the whole planet unless further precision is needed, in which case, exact location data is needed to determine the actual value.

The average value on the surface is what I claimed it is. If you're considering difference in altitudes the average gravity is negligible since your reference point can be half of infinity

And the minus sign matters when you're on the surface and depends on your reference point or what you're trying to calculate, (gravity is a positive force that hasn't been shown to be negative.) The sign just indicates a direction, which wouldn't have been necessary if you had already specified you were falling down, which you did
