Being single and interested in anyone, is separate from the answer that you'd like to give.
Yes, I'm single, and no, I'm not interested in anyone right now.
Telling her I like you has nothing to do with being single, or not being interested in anyone.
Adding what your coach said might work, but might also get you torpedoed. She didn't ask if you're interested in her, and giving up that info may make you seen desperate.
Your coach seems to practice being forward to the point of possibly forcing things. A little cart before the horse-ish if you ask me.
Instead of blurting out that you're interested in her, you should have just answered her question, and THEN asked, "Why?" "Are you interested in me?" Then she'd have answered (or played coy, like most females do), and THEN you could have added or said that you are interested in her (as well).
