Missing context. How long have you been dating? Have you discussed thoroughly and come to an agreement on finances, politics, religion, number of kids desired and how well you cohabitate? Have you known each other long enough to know each other inside and out?

If the answer to at least half of these is not "yes" then the relationship has not progressed far enough to be worried about meeting each other's parents. Also as a woman you have to realize that meeting the parents is rougher on a man than a woman. It is much much easier for a girl to get in the good graces of a boyfriend's parents than it is for a boyfriend to gain the good graces of her parents, especially her father. A man has to be prepared to answer ANY question your father may pose, which is why the above questions matter so much. If a man seems unprepared to a father, he is seen as immature and unworthy of his daughter and this WILL create friction. In comparison all a woman has to do to win over his parents is to prove she has a good heart, good intentions and will not cause undue drama. This can be done in ONE meeting. Also, if a woman messes up her first impression, she will have more chances to redeem herself. With a boyfriend and the girl's father, the first impression is EVERYTHING and a bad first impression is almost always a kiss of death to the boyfriend in the father's eyes.

Yes for a couple reasons first one is when you love someones daughter you want to make sure they know who you are and let them see and watch you around d her they want to know your goals in life level of respect entrust and how you act it's very important to the daughter and the parents if a guy doesn't want to meet your parents then he basically doesn't want anybody to know who he is or he doesn't want to be judged because he already knows who he is and he probably doesn't feel as if he's good enough
And that's another reason why he has to meet your parents so you can step up to the plate if you serious if you guys not serious you really doesn't want to meet your parents but you can't force the guy and you don't want to you want him to do it on his own that will prove to you and your parents who he is and you would think it would prove something to him to

I think it’s weird, personally, because if I’ve been dating someone a year… My parents don’t even know the person I’m with, for a year? The dude is a complete stranger to them… Wouldn’t they want to meet him?

I've been through this kind of thing before with a girl, her not wanting me to meet her parents and then her not wanting to meet mine.
The 'relationship', if you could call it that, needless to say did not end smoothly.

It's a very weird thing, as another user has said, to be in a relationship with someone and then not want them to meet your parents, you to meet their parents, or both.
I would listen to the alarm bell that might be ringing in your head right now about this guy, and reconsider a long-term relationship with him is this continues further down the line.
Unless he has severe anxiety issues, or a very valid reason for him not to meet your parents, I'd say as he's supposed to be your boyfriend he has no excuse not to.

Meeting parents is a big step. It's stressful. I wouldn't WANT to go through that either.

Meeting parents is a necessary step in the growth of your relationship. Do things to make your boyfriend more comfortable. Talk to him about your parent's interests. That will give him something to smalltalk about. Similarly with your parents. Try to keep the first meeting short and light. Thanksgiving day is probably not the first best occasion.
