How can I tell my girlfriend that I don't want to text 24/7 without being rude?

I feel your pain. I rarely bother to even look at my phone more than twice a day..
Tell her you love her but there's something you need to tell her.. She is instantly going to think that's the 'break up' talk. But then ask her if she has any idea what it's about, see what she says.
Once she's had a few moments to contemplate it, tell her you cannot deal with all the texting. If she cares anything for you? She'll just be pleased you aren't dumping her.
It might seem cruel at first, but it's the best way to get her to appreciate just how difficult it is for you.
