It turns out she knew me before ( I didn't know about this), and she also followed me on IG and approached me in college saying "Hi!",, It was after this I asked her out on text saying ,"Would you like to grab a coffee next week?" , She said, "Yeah sure, I'll let you know once I'm free" That week has started today, and she has not replied yet, should I still wait, will she "let me know" ?

Looks like she does indeed have a very busy schedule or that she has lost interest in having a coffee.

Perhaps you can text her again and jokingly say "boy, are you ever busy! Remember you wanted to let me know about grabbing a coffee this week?". Something in that line. Make sure you don't put pressure on her when you follow up on the date.

But perhaps she got cold feet because those "grab a coffee" sentences also may signify more than what a simple coffee meeting mean. You could see it as a potential date and she is aware of it but does not want to really go on a coffee date.
