What's a recommended amount of time to wait to ask someone on a date, but you dont know anything about her breakup?

There is this insanely beautiful woman that I work with. I've had a crush on her but I didn't follow her life.

We were in her office today talking for about 30 minutes or so. She was showing me pictures of her son and I showed her some of my nephew. Overall had a good chat.

I found out during our chat that she was no longer dating anyone. I'm not really sure how long they were together for or when they broke up.

Any suggestions on how long I should wait to ask her on a date?

You should ask her for something low key. Like hey I’d like to take you for coffee sometime. But don’t fall in the friend zone if you wait too long.
