My ex girlfriend had to move away. We were together for a year, still follow each other, like posts but barely talk. Would this be disrespectful for a future partner if I’m still in touch with my first love? We are both seeing new people.

You should ask yourself why are you following them? Do you still like them? Are you trying to keep tabs on them? If no, then unfollowing them shouldn’t be an issue. Holding on to history hinders your future
