Why would a guy pursue a woman he finds physically unattractive?

He wouldn't. That is incongruent. That's not what's happening. It's impossible.

Either

1. He finds her physically attractive (despite any past indications to the contrary).

or

2. He is not, in fact, really "pursuing her".

(the only other option is for some SUPER sketchy reason. Like..."I'm going to make you my girlfriend and then start pimping-you-out type-sketchy")

Those are the options. I don't know your situation well enough to know which one is right.

Pursuing a woman that makes us sick to our stomach is an impossibility, therefore, this guy is lying. We can overlook flaws when buzzed and horny but we can not chase what we detest. They call it a one-night stand for a reason.
