He asked me how many men are in line to date me and I have no idea how to answer this? Why is he asking me this? I am sure he is dating other people too - but what do I say so I can keep him interested. I honestly have not dated a lot because online dating has been so bad in recent weeks that I have been focused on myself - please let me know any help would be very much appreciated

I meant that probably he couldn't find someone better than you.
You guys met, probably he had a few other dates lined up, he didn't like you enough at first, he thought he could do better, but went on those dates and realised, he couldn't. I'm just guessing but this is what I would think.
There's no harm to give him a second, LAST, chance, but do not invest in him for a while, and you should go on other dates, to show yourself too, that you have options. Be careful with him until he proves himself.
