First date. They usually ask about my job, retirement plans. I tell them my family has lived in this area since 1790 so it is unlikely that I am going to move anywhere. I tell them that I am an active participant in my church but not a holier-than-thou person. I tell them that I have musical interests and abilities, enjoying classical music as well as classic rock, that I place an emphasis on self-reliance. I tell them that my mother and step-father are still alive and I visit with them at least once every two weeks. I tell them that I am a very traditional guy with respect to how I handle dating, that I am chivalrous, and I generally appreciate people who follow traditional gender roles.

They dont need to know anything
I keep things fairly light, but gauge how they act to see if I can add more in.
I start with "safe" topics like work, hobbies/sports, etc. Then I mention things like being bisexual, to test the waters for queer acceptance, and mention a complaint about the current conservative government to test out their political affiliation.
If those pass, I know I can be a bit more myself. If I'm not sure about them, or they fail, I can leave or stay strictly professional and will limit topics to work and sports.
Random, completely useless facts—unless I find them interesting and the conversation flows naturally.

The usual things. Where I'm from, what I do for a living, where I live, my favorite likes, etc. She usually tells me the same about her.
1st date
I would tell them I crossdress, i figure why hide it, one shows them that you trust them. Secondary means I don't have to hide my clothing from them. Only for them to find it later and then you have a can of worms on your hands.
For job interview
I would talk about my success and my skills. I would make it seem like they couldn't afford not to have me.

Sure, if they ask. I usually show an interest in them by asking questions about where they work, where they are from, what kinds of things do they like to do, and harmless things like that in order to find a topic that we can converse about.
