Why guys test girls to see if they like them and when girls show interest they leave?

I don't understand how some guys think like why would someone be so interested in a person and literally go out of their way to test if that person still like them? Don't they have the knowledge to understand that THEY are giving the wrong message to the other person that they are interested in them too?

And the funny part is that they go to their friends telling them how great catch they are and how girls want them when THEY ARE THE ONE WHO MADE THE FIRST MOVE !

When you say test what do you mean by that? Like give an example so I understand a bit clearer.

For example staring for way too long and he is obvious, inventing your personal space and standing way too close to you to see if you will move, resting his hand on your shoulder to see if you will move... also if he knows a girl likes him he will on purpose walk past her to see if she will notice and turn around to see him walking away things like that

Oh okay I see! Yeah that's not cool! But I myself do test real interest as well but nothing nearly that ridiculous. It's more along the lines of letting whoever I'm talking to message or call me first at some point if I'm the only one texting or calling first. If they don't ever message or call I see that as a lack of real interest. But anything more than that is kinda ridiculous.
