Why do some guys are trying to impress girls and try to test them to see if they are interested and when the girl is showing interest they step away?

There was this guy at the gym that I had a crush on ( he didn't have a girlfriend) and he seemed to be interested too but at some point his behavior was starting to getting odd.

When I started going to the gym this guy was the one who showed interest first (he was staring at me and tried to show me how strong he was blah blah blah etc) BUT he didn't try to approach me , so I tried to make the first move and start a conversation with him BUT all of the sudden he couldn't speak he was getting anxious etc. At first I thought that he was simply shy so I tried to start a conversation with him at least 2 more times and his response was the same so I just gave up on trying. He on the other side didn't, he kept trying to impress me and at some point he brought his friends into the gym and they were also checking me out.

The situation was getting frustrating... I was starting to get hit on by "most of the guys at the gym" except HIM. This whole situation lasted one year and guess what

One day and out of the blue I overheard from his friends that he got a new girlfriend and that he will be not attending to the gym anymore and I was left there confused like-

Why do some guys act this way? Are they really interested? Are they shy? They were playing? And if so? Why?
