However I’m not religious.. and that’s really hurt my feelings..

I would take dating to be a process where you are finding out if there is long term relationship in it. Apparently she doesn't because she bails when you open that up. Presumably it has been for fun from her view.
Look be glad she hasn't wasted more of your time. She has known your religious background, natonality and race from the get go and presumably knew she wasn't interested in going that far in the relationship stakes without telling you.
So she was always was wasting your time. You could ask on what basis would she be willing to continue but I think you should stay away from her. Maybe with the Palestinian stuff she just thinks it would be cool and give her status to be dating you.

Islam is thought of as a dangerous religion that aims to conquer everything to move forward, to assimilate every individual. That's of course not true but that's how a lot of people (especially white folks) think of it. She might be imagining that to date you she must become muslim, and for a woman outside of the culture, that's fucking terrifying. Western women (I assume that's what she is) are given a lot of freedom and ambition, while Arab women are told to cover their hair, and share their husbands with other ladies. It is actually true that muslims do want to conquer all and forcefully convert everyone to the ideology of Islam. Whether practicing or not, that evil is instilled in the younger generations. Islam is not the religion of peace and it never has been. Hell it's not even a religion.
I don't blame her in the slightest for ending it. She probably saw a red flag in something he said or did that may have seemed innocuous at the time. No matter her reason it was only two months. Build a bridge and get over it.

As for what to do... you can't do anything if her mind is made up. You cannot force someone to have feelings or accept you. That is the sad reality of the real world.
