How well do you know her? Ask her if she wants to grab a bite to eat this weekend. Make sure it's Wednesday or earlier so she has some notice. "This weekend" is vague enough to give her several options. If she has an opening for a date she can tell you when would work for her so you're night asking over and over seeming to be super thirsty. Friday night? Saturday lunch? Saturday night? Sunday? Just ask her if she's interested in going out to eat this weekend. It's possible she's got plans, you can follow up with Next weekend? If she's still busy she's probably not into you.

Then maybe you should just strike up a normal convo and then say something like 'I've always wanted to ask you out, but always thought you'd say no'! Go for her soft side and see what she says!
