I don't wanna ramble so tl;dr:

Girl I used to know didn't want me cus I was broke and had "no ambition."

She kept me around as friends, but it was kinda painful for me so I said bye

I have a stable, well paying job now. I am buying my own place.

Girl comes back around, sees that I've "improved" and wants to "give me a chance."

See my thing is, if you thought I was a piece of shit before, you'll think I'm a piece of shit now too. Ain't shit changed except I have a job. I got lucky. I don't believe for a second she sees me any differently deep down. Also, just for the record, AFTER she turned me down, she convinced me to take her on a practice date so that I could meet someone else. Shit cost like $200 and she acted like she was doing me a favor. I already know I'm not gonna entertain this relationship, but I just wanted to vent.

I cannot blame her for not wanting to be with someone who was broke and had no ambition. That's a very unattractive trait in a partner, especially a man. On the other hand, from what you're saying, she's not very fair to you neither. It's one thing to want someone who has their shit together, it's another to feel entitled and ungrateful.

So aside from her possibly being such a bad person as you say, I don't think this situation is that bad... it's like when a girl is unpopular and disliked but actually puts the effort into her looks and improving her personality and the guy who was uninterested before likes her now. Sure, people might say it's shallow... but I think it gives us opportunity to get better. You got better, but that doesn't mean that she is now good enough for you.

Maybe she needed to see some improvements in you, to know that you could be financially independent before she could see a future with you.
