That's a standard shitty human reaction to guilt. People do this in lots of different scenarios. They do something against you/to hurt you, then hate it when you cut them off. It makes them see themselves for the shitty person they are and that's what they don't like.

I don’t think that the person is bad because they rejected me (everyone is entitled to their own standards and preferences), but if I choose to distance myself or not to be your friend, that’s my prerogative.

I do agree with you, they're not bad because you're not their type, that's true. But if they're feeling offended because you want to distance yourself it's cuz they feel guilty about it. You cutting them off makes them feel bad about rejecting you, but that's not your fault.
