I am a divorced Dad and have noticed a nice woman in my apartment complex who is a single mother. I want to get to know her, but have not dated in 20 years and I know today’s dating scene is not like it was when I was dating as young man.
Would me leaving some flowers at her door be to weird or creepy? I have tried to talk to her but she has young daughters and the timing has always seemed wrong.

I believe that leaving flowers is not really appropriate anymore with the younger generation and may be seen as odd or even inappropriate. You don't tell us how old those children of hers are and if they are adults themselves or still minors. That may make a difference because children may not approve that one parent is suddenly dating again for a number of reasons.
Your best bet is to attempt to strike a conversation with that lady next time you meet her. If you can and without being obnoxious, stalking or in any other way voyeur, try to find out what her hobbies or interests are and direct the conversation towards those topics. Showing interest in something she likes is probably your best bet to get her attention.
Don’t leave flowers. That’s weird.
Just be patient and wait for the right moment you can strike up a conversation.
