I've never had problems with dudes, but I've seen a decent amount of guys online say they only want short women or that if you're over 5'6 you're cooked, stuff like that. I kinda want to see if my dating pool is actually smaller than average

No... I don't think you need to worry about this. I'm not saying there aren't any guys out there who might say this. But it's not a common thing. You're proof of that yourself. As you said... you've never had any problem.

I can only speak for myself as I am about that size and I have always been bothered by men that don't care what height you are as long as you give them what they want.

Mainly in my age group, desperate men are willing to take any girl aged 16+ in order to get rid of their testosterone. They are not choosy when it comes to a potential woman they can fornicate with.

Men tend to think with their primary brain between their legs and very seldom with their secondary one between the ears. Thus, it does not really matter whether a girl is 4' or 6' tall as long as they can copulate with them.

But other factors shouldn't matter much?

What if a guy cares more about other things?
It can be other physical things, such as if he thinks she has an attractive face or general fitness level or such.
Or more about personality, like yes her personality, her behaviour, values and such.

Why should length be the only valid criteria?

I'm 5'10 and I met a great guy on a dating site. It can be done. For the ones saying your cooked, well they sound superficial anyway and you'd be avoiding a disaster. So as far as I'm concerned, the trash is taking itself out there. You'll be just fine in your search.
