That's actually a tough one. I have said I had a good time just being polite, then one guy immediately asked if I'd like to go out again sometime. All I said is "I'll see but it probably won't be for a while, because I have a lot coming up", hoping he'd take the hint. It's hard having to basically tell someone you're not interested, probably just as hard as being the one putting yourself in the position of being rejected.
