I told the lady I was out with that she looked beautiful, she responded with "I know".

That's a pretty big turn off to me. Arrogance is not confidence. She could have been elegant and appreciative of the compliment, simply saying something like "Aww thank you. I really appreciate that." That would be way more attractive to me.
