I'd say the ones that are least likely to be displaced by technology or changes in regulation. Right now, that looks like the skilled trades and engineering. That's the direction I pushed my students to consider and have introduced to my own sons, telling them that is what I'd do (it also helps that their cousins' father is a successful electrical engineer).
