I haven't seen some SF movies that I would like such as "Ex Machina", but, for me, I agree with most film critics: "2001: A Space Odyssey"
That might be tougher for you people weaned on CGI to appreciate, but "2001" wasn't made with any CGI. It truly is the greatest of all science fiction films because of the nature of the filmmaking - the sparse dialog that still moves the story along, the costumes, the cinematography, the music, and the special effects. Sure, some of the special effects look dated, but others are still astonishing.
I am going to paste a scene. It is the opening of the third part of the movie (there are four parts), "Jupiter Mission". In this scene, we see the American spaceship Discovery One on a mission to Jupiter.
Four things make this scene special...
1. With the wonderful music, this is the first time in film history that we have the "spaceship fly-by" made more famous in the opening moments of "Star Wars"; George Lucas was motivated by "2001" here.
2. If you watch closely, you will see the stars in the background very slowly move. This gives the illusion of genuine space travel and, while we as viewers are traveling basically at the same speed as Discovery One in that shot of the whole ship, we can imagine how fast it is really moving.
3. Also, for about 5 seconds, if you look closely when the scene shows the front of the spacecraft, you can see through the ship's window astronauts moving around.
4. Finally, astronaut Frank Poole jogging along the interior circular portion of the ship. Both first watching from a single point in the interior which is a truly amazing shot and then with the camera right behind Frank. This is astonishing filmmaking and how they filmed these scenes is the stuff of legend. How do you think they made that shot keeping in mind there was no CGI. That shot was filmed.

and some could say the same about filmmaking overall.
Let me plug "Game of Thrones" series and the ongoing series, "House of the Dragon".
Another two series I loved were "The Expanse" and "Raised By Wolves".

I don't know if it's sci-fi or not, but my fave is Transcendence. Johnny Depp has his mind uploaded to the Internet, because he was dying. It worked. All he wanted to do was heal the planet, but the government took that as a threat, and killed him.

In no particular order:
There's a faaabulous documentary about the Alien movie. Man, I couldn't believe what an in-depth analysis. There's all these themes, subtext, about female strength. Sigourney is one of the most badass female leads of all time.
But get ready to scream. Very scary (I thought.) And all that slime...
@exitseven Cillian Murphy, Chris Evans. Very capable ensemble cast. This is not a well-known movie but I think it deserves a lot more recognition. I highly recommend it.

I don't know how I could narrow it down to one, so in the name of making a suggestion that (probably) no one else will, I'll toss in Duncan Jones' Moon. It's one of those movies where the less you know going in, the better, so I'll just say that it's an excellent reminder that "sci-fi" doesn't just mean "monsters/aliens", and doesn't require huge casts or flashy special effects.

“Aliens” - sci-fi horror
“Arrival” - sci-fi drama
“Galaxy Quest” - sci-fi comedy
“Time Cop” - sci-fi action
“Serenity” - movie conclusion to the possibly greatest sci-fi series of all time,“Firefly”; i highly recommend watching the series first. It’s only one season, easy to binge in a weekend!
“The Abyss” is arguably sci-fi, but also arguably not. Watch it and decide for yourself.
“Ex Machina” compels philosophical thoughts about the nature of “life” as it might apply to AI.
“Alita” kinda does too, but it’s much edgier and more action packed

I got a bunch but I wanna suggest Gattaca because it's grossly underrated in my opinion. If I go with my instincts though it'd be Alien, Aliens, Terminator, and Robocop, but everyone has probably already watched these.
Avatar.
I really hope Avatar 2 doesn't disappoint. Because what I didn't like about the first one was the humans being defeated and leaving Pandora. Because that is NOT in our species nature. We would have come back 10 times stronger and EXTERMINATED the Navi. We would have razed Pandora to the ground. And it sounds like James Cameron is exploring precisely that in the sequel.

I like post apocalyptic, also thriller scifi with aliens and monsters.
Any Star Trek with a preference for II, III, and IV.
Avatar, some Star Trek movies but not all, Cowboys & Aliens, Stanley Kubrick's SF movies have very profound context.
My favourite are the Men in Black trilogy.
