Everytime she calls you that, call her something else back, nothing really mean, but something that can be seen as hurtful. If she calls you on it, call her on it back.
Helps if you can use different metrics to justify that you are healthier than she is if it goes to that.

In my experience you can't, my parents often make remarks that I don't want to hear. I think moving out would help but not stop it. I just avoid them and if they start talking about the subject they make there unpleasant and unwanted remarks I just leave the room.
And well I mostly ignore there texts and phone calls.

If that is really a picture of you I think you are in fine physical condition. Just tell your mother what your BMI is and your bodyfat percentage and how healthy your doctor said you were on your last check up.
You look very fit not a skeleton like someone that's anorexic. Tell her next time she says that she looks like she has gained weight. That should shut her up.

Well you have almost no body fat because you seem to work out real hard but as long as you’re healthy and eating she shouldn’t bother you but you’re not a kid so she shouldn’t be in your business, so try not being around her
