What are the signs girls, if any. I'm not just talking about attraction, I mean when a guy means a whole lot more to you but she's not telling him?

She's engaged when talking to you but keeps her distance. She'll appear interested but stays away/avoids you in person. I don't know if this helps. When a girl is interested but doesn't want to show it, it hard for me to tell and im a girl, lol. But just see how much attention she gives you. Pay attention to how much she remembers important things about you. If she likes you, she'll care about you whether she shows it or not.

That sounds about right. If your getting a i'i secretly like you' vibe from her, go for it and ask her to do something together. If she's shy it could just be hanging out and not an all out date.

For me i remember his birthday, what he likes in a girl, foods he's tried that he really liked, places he'd like to go, things he hates... ect.

For me the signs would be: making a lot of eye contact, laughing at your jokes, showing interest (asking questions), doing an effort to dress up, being comfortable around you but also wanting to look my best. Hope this helps!
