Girl has a boyfriend but constantly stares at me and holds eye contact?

This girl I used to talk to has a boyfriend. Once I found out she was dating someone I gave her space. Over the last few months they've been dating she was not acting the way she did before. She was acting much more distant towards me... until a couple days ago.

The other day, I caught her staring at me. I decided to hold her gaze and after a couple seconds she looked down and away, then right back at me with a smile. After that, I caught her staring at me multiple times, and she would not look away. I held the eye contact a couple times but she would continue to hold it and not look away. I kept trying to pretend I didn't notice her staring at me, but that did not help either.

Whenever I try to talk to her, she seems kind of annoyed and doesn't say much. I know her boyfriend, I work with him, and it seems weird and confusing that she is acting like this.

*Is she interested in me again or why else would she be acting this way?
