He texts me everyday but trying to hold a conversation with him is like pulling teeth?

The guy I have just recently started seeing texts/ talks to me everyday but sometimes getting him to have an actual conversation is impossible...he's not like that when we are together. He seems way more confident in talking to me when we are actually together. I'm wondering from a guys standpoint why this might be? Is there anything I can do to help smooth out this lute cork of his!?

Lots of people seem to rely on texting to have full throttle conversations (in this world of technology) which is just sad. The fact is,not everyone is interested in texting to talk to someone else. Some folks use texting to send brief messages or to just say hello and not have an extensive conversation. This maybe him. You said that he is a lot better in person and "in person" sounds good to me because that way he can connect with you. Texting is very impersonal anyway. I know you wanted a guys point of view,(just giving my two cents) but some guys just can't stand the texting or the phone calls as girls do. And some if they do it,its because they REALLY like you! Not saying your guy doesn't like you,he just seems bad at the whole texting thing.
