I (32m) am friends with a taken coworker (30f). We get a long and are cool, never any outright flirting just playful banter. While talking she called me honey, is that a Freudian slip?

No, it's not a Fruedian slip, I call people honey all the time, honey, hun, dear, etc. I think you are reading into it very deeply because you like her and you wish she liked you! But take it from a girl, calling someone "honey" does not imply they are interested in you.
