In my state its how you declare your primary residence for tax purposes. Your homestead is taxed at a lower rate than secondary homes such as a lake cabin, vacation home, or seasonal home, and with farms, the entire plot your homestead is on is taxed at a lower rate. Often you need to make certain declarations of what percentage of the year you reside there in order to qualify.

Here in the US, "homesteading" refers to the process of settling uninhabited land by having the government grant people land, which they have to develop (usually by building a house, and/or a farm or something like it), and then get to keep, if the development is thorough enough.
