Why do people blush?

I like this guy but I'm not too for sure if he likes me. I work with him and one day I came down to take some things to the dumpster. I didn't know he was coming to work that day so when I walked past his door and saw him I was surprised and I said What are you doing here!.. then he said why you say it like that as he was eating his pizza. And immediately in the most sweetest and child like way I started saying I'm sorry more than once and he started smiling and I noticed his cheeks turn super red.

Before all that happened one day he locked eyes on me and when I caught him he didn't even turn away as he was walking even when he stopped at his desk his eyes were focused on me I'm the one who broke eye contact after a good few seconds. I've noticed to when ever he's around me he's constantly clicking his pen super fast or when we're riding in the elevator he's jiggly his keys in his pocket while talking to me or tapping his fingers against something. Sometimes when he's in my area he'll see me and sigh a little almost like a exhale I feel like he wants me to talk to him and I do when he does that. He does it sometimes don't know really know why.
