The interest can be several types of interest, that includes relationships, just sex, money etc. If you are attractive then there's a high possibility that your body and appearance is what he is chasing, mostly if he has a girlfriend and is hiding it, dont get me wrong it's possible he might be in an open relationship and she knows but what are the chances of that

He repeats specific things I have been saying very loudly in his own conversation and sometimes repeatedly

No I was talking about sex work with this person at a party as I wrote an article about the subject recently. This guy kept loudly talking about prostitutes with someone else.

Ohh okay, well if in fact he is eavesdropping it could be him interested in the topic without wanting to discuss it with you. You mentioned that the guy used to flirt and all that, I’m guessing it stopped due to him getting in a relationship or whatever. If that’s the case then he could be avoiding you out of respect for his girlfriend but if he hears you mention a topic he likes he talks about it to someone else since he can’t with you. If that make sense but of course this is all speculative lol.
